Ingredients
1⁄3 c butter
1⁄2 c brown sugar
1 egg
1 t vanilla extract
1 3⁄4 c almond flour
1⁄2 t baking soda
1⁄4 t salt
1⁄2 c dark chocolate chunks
Instructions
Preheat an oven to 350° F.
Brown the butter in a saucepan over medium low heat, then remove to cool while you assemble the rest of the recipe.
Combine all the wet ingredients in a bowl, then add all the dry ingredients. Stir in the chocolate chips.
Line a baking sheet with parchment paper and form 14 round cookies by hand. Top with course salt if desired.
Bake for 12-14 minutes or until the cookies turn golden brown on top. They may look underdone but that's just because they're made of almond flour.
