Ingredients
1⁄4 c olive oil
3 garlic cloves (sliced)
4 tomatoes (peeled)
2 c spinach (fresh)
2 cn canellini beans (rinsed)
1 T water
1⁄2 t italian seasoning
1⁄2 t red pepper flakes
salt and pepper
2 c mozzarella (shredded)
Instructions
Preheat oven to 475°F. In a large skillet, fry garlic in oil. Add tomatoes and mash with a potato masher.
Add spinach, beans, water, italian seasoning, red pepper flakes, salt and pepper.
Sprinkle cheese on top and bake until bubbly, about 8-10 mins. Finish off with the broiler and serve with a crusty loaf.
